Muffin ingredients:
- 350 gr. Flour
- 2 ¼ teaspoon carbonate
- 1 ½ teaspoon baking powder
- 1 pinch of salt
- 5 ripe bananas
- 100 gr. blueberry puree
- ½ cup oats
- 1 ½ cup muscovado sugar
- 270 gr. Melted butter
- 1 ½ cup frozen blueberries
- 3 eggs
Coverage ingredients:
- 200 gr. Oats flakes
- 60 gr. Butter
- ½ cup muscovado sugar
- 70 gr. Flour
- 100 gr. Dehydrated blueberry
Coverage procedure:
- Mix all the ingredients in an 850ml Mixing Bowl - MXB-75Q - Winco very well to obtain a dry dough.
Muffin procedure:
- In the bowl of our Artisan 10 Speed Blender - KSM150PSPA - Kitchen Aid we place the bananas, blueberry puree, and sugar, we beat at low speed with the hook attachment to break up the bananas, then we add the rest of the ingredients, beating very well for 7 minute space
- At the end we add the blueberries with a little flour to the mixture in an enveloping way.
- We place the mixture in a travessa brand mantecadas plate at ¾ capacity of our container, we add a little of the coverage on top of each cupcake
- We bake at 180°c for 25 minutes.
